Olive Oil Rosemary Loaf

Ingredients:
- 3 cups Lifestyle Food Gluten-Free Cake Flour
- 1 teaspoon instant, rapid-rise or active-dry yeast
- 1 1/2 cups water, room temperature
- 4 tablespoons Lifestyle Food Cold Pressed Extra-Virgin Olive Oil
- 1 1/4 teaspoons salt
- 4 tablespoons fresh rosemary, chopped
- 1 tablespoon coarse sea salt
Method:
- In a medium bowl, whisk together the bread flour and yeast. Add one tablespoon of olive oil and the room-temperature water. Stir the mixture with a wooden spoon until a shaggy mass forms and no dry flour remains. Cover the bowl with plastic wrap and let it sit for 10 minutes.
- Sprinkle the salt and 3 tablespoons of chopped rosemary over the dough. Drizzle the remaining 3 tablespoons of olive oil on top, and mix until all the ingredients are fully incorporated. Cover the bowl with plastic and let the dough rest for 20 minutes.
- On a floured surface and with wet hands, fold over the dough gently until you form a round loaf. Preheat the oven to 200 degrees Celsius and place the bread in a parchment-lined cast iron pot.
- Allow the dough to rise for an additional 15-20 minutes. Dress the dough with more olive oil, coarse salt, and additional rosemary.
- Bake the bread for 40 minutes. Then, remove the lid and bake for another 15 minutes until the bread achieves a beautiful golden brown color.
