Rooibos Carrot Cake Loaf with Honey Beet Glaze

This Rooibos Carrot Cake Loaf is made with brewed rooibos tea, grated carrot, ripe banana, and warm spices, it’s topped with a naturally vibrant honey beet glaze that makes every slice feel extra special.
Whether served with afternoon tea or enjoyed as a homemade bake to share, this loaf is full of comforting flavours.
Ingredients
For the loaf:
- 2 rooibos tea bags
- ¾ cup boiling water
- 2 ripe bananas, mashed
- 1 cup finely grated carrot
- ⅓ cup honey
- ¼ cup olive oil
- 1 tsp vanilla extract
- 1 tbsp ground flaxseed + 3 tbsp water
- 2 cups oat flour
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- 1 tsp cinnamon
- ½ tsp ground ginger
- Pinch of salt
- Optional: ¼ cup chopped walnuts
Honey beet glaze:
- 2 tbsp freeze-dried beet powder
- 2 tbsp honey
- ½–¾ cup icing sugar
- 1–2 tsp reserved rooibos tea
Method:
- Steep the rooibos tea bags in boiling water for 10 minutes and allow the tea to cool slightly.
- Mix the flaxseed with the water and leave to thicken for about 5 minutes.
- Preheat the oven to 180°C and line a loaf tin.
- In a large bowl, combine the mashed bananas, grated carrot, honey, olive oil, vanilla, flax mixture, and 1/2 cup of cooled rooibos tea.
- Fold in the oat flour, baking powder, bicarbonate of soda, cinnamon, ginger, salt, and nuts if using.
- Pour into the prepared loaf tin and bake until a skewer inserted into the centre comes out mostly clean.
- Allow the loaf to cool completely.
- To make the glaze, whisk together the beet powder, honey, icing sugar, and enough rooibos tea to create a smooth, pourable glaze.
- Drizzle over the cooled loaf before slicing and serving.
