Berry Pizza

Preparation time: 10 minutes  

Cook time: 18 minutes  

Serves: 3-4 people  

Ingredients  

Method  

  1. Add margarine, brown sugar, and salt to a medium mixing bowl and whip together until fluffy, about 3 minutes.
  2. Mix in the plant milk and the vanilla extract.
  3. Add in Gluten Free Flour and blend until just combined. Add ½ tbsp of additional milk, at a time if needed, to thin the mixture out.
  4. Press the dough into a parchment paper-lined pan, and bake for 15-18 minutes until brown to create the pizza base.  
  5. Remove to cool, add whipped coconut cream or vegan yoghurt to the cookie pizza, berries, figs, and fresh herbs. 
  6. Top with honey and chopped pistachios, slice and serve.
