Berry Pizza

Serves: 3-4 people
Ingredients
- 1 cup Lifestyle Food Gluten Free Self-Raising Flour
- ½ cup margarine softened
- ¾ cup packed brown sugar
- ¼ tsp salt
- 1½ tbsp plant milk, add more as needed
- ½ tsp vanilla extract
- Fresh berries
- Honey
- Fresh herbs
Method
- Add margarine, brown sugar, and salt to a medium mixing bowl and whip together until fluffy, about 3 minutes.
- Mix in the plant milk and the vanilla extract.
- Add in Gluten Free Flour and blend until just combined. Add ½ tbsp of additional milk, at a time if needed, to thin the mixture out.
- Press the dough into a parchment paper-lined pan, and bake for 15-18 minutes until brown to create the pizza base.
- Remove to cool, add whipped coconut cream or vegan yoghurt to the cookie pizza, berries, figs, and fresh herbs.
- Top with honey and chopped pistachios, slice and serve.
