Satay Noodle Bowl
Ingredients:
For the Satay sauce:
¼ cup Lifestyle Food Peanut Butter
2 tsp soy sauce
1 tsp grated ginger
1 tbsp sesame oil
¼ cup water
½ lime juice
For the bowl:
200g Rice noodles cooked
Roasted sweet potato
Carrots julienned
Diced cucumber
Diced green beans
Avocado
Shaved red cabbage
Steamed tender stem broccoli
Coriander
Method:
- Boil the noodles until al-dente and then cool in cold water so that they don’t keep cooking and get soggy.
- Chop all the vegetables and steam the broccoli and roast the sweet potatoes, then place all the veg and noodles in a bowl.
- Mix all the satay sauce ingredients together and keep adding water until it forms a nice dressing like consistency. Drizzle over the salad and enjoy
