- 100g Lifestyle Food Raw Walnuts, ground into a rough texture
- 1½ cups brown lentils
- 1-2 tsp tomato sauce
- 1-2 tsp soy sauce
- 1-2 tsp Worcestershire sauce
- 1 tbsp nutritional yeast
- Salt and pepper (to taste)
- Dash of water
For the Salad:
- 2 cups chopped salad leaves
- 1 cup chopped cherry tomatoes
- Diced red onion
- Diced peppers
- Fresh jalapeño (sliced)
- Fresh herbs
- Tortilla chips (to serve)
- Avocado
For the Cilantro Mayonnaise:
- 1 cup mayonnaise
- Handful of cilantro
- 1-2 tsp lime juice
- 1-2 tsp honey
- Salt and pepper (to taste)
Method:
- Cook the Taco Mix: Heat a dollop of olive oil in a pan. Add the walnuts, lentils, tomato sauce, soy sauce, Worcestershire sauce, nutritional yeast, and a dash of water. Season with salt and pepper. Sauté until fragrant and heated through, then set aside to cool slightly.
