Ingredients

  • Lifestyle Food Gluten-Free Macaroni
  • 2 tbsp salted butter
  • 2 cups milk
  • 1 tsp white miso paste
  • 1 heaped tbsp nutritional yeast
  • 1-2 tbsp corn starch (or regular flour)
  • Salt and pepper (to taste)
  • Grated cheese
  • Creamed cheese
  • Bread crumbs or crushed tortilla chips (to serve)
  • Parmesan (to serve)
  • Fresh herbs (to serve)

Method:

  1. Cook the Pasta: Prepare the macaroni according to the packet instructions. Once cooked, drain and toss with a drizzle of oil to prevent sticking.
  2. Make the Sauce: In a saucepan, melt the butter. Add the corn starch (or flour) and whisk to make a roux. Slowly add the milk while whisking, then stir in the miso paste and nutritional yeast. Continue whisking until the sauce thickens and is smooth. Season with salt and pepper.
  3. Assemble the Dish: Mix the sauce with the cooked macaroni. Transfer to a baking dish and top with grated cheese, dollops of creamed cheese, breadcrumbs or tortilla chips, and parmesan.
  4. Bake: Place in a preheated oven at 180°C (350°F) and bake for 15-18 minutes, or until the top is golden and crispy.
  5. Serve: Remove from the oven, top with fresh herbs, and enjoy warm!
