
Moroccan Spiced Quinoa Salad
Things are about to get spicy with this vibrant Moroccan Spiced Quinoa Salad. Perfect on its own or alongside your favourite protein.

Ingredients
- 1 cup canned chickpeas
- 1 1/2 cup steamed pumpkin
- Cooked Lifestyle Food Quinoa
- Carrot ribbons
- Brown dates
- Sliced figs
- Avocado
- Salad leaves
- Moroccan spice
- Dukkah to serve
- Pine nuts to serve
Moroccan Spice Mix
- 1 tbsp Lifestyle Food Ground Coriander
- 1 tbsp Lifestyle Food Paprika
- ½ tbsp cracked black pepper
- ½ tbsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp cayenne pepper (optional – leave out for a mild spice mix)
- 1 tsp allspice
- ½ tsp brown sugar
Method
- Preheat the oven to 180 degrees Celsius.
- Mix the spices and store them in a jar.
- Place the chickpeas and pumpkin on a parchment paper-lined tray, drizzle with olive oil, 1 tbsp Moroccan spice, salt and pepper. Bake for 10- 15 minutes until crispy.
- Cook the quinoa according to the instructions on the packet.
- Plate the salad bowl with chickpeas, pumpkin, quinoa, salad leaves, sliced figs, dates, carrot ribbons, dukkah and pine nuts.
