Moroccan Spiced Quinoa Salad  

Things are about to get spicy with this vibrant Moroccan Spiced Quinoa Salad. Perfect on its own or alongside your favourite protein.

  • 1 cup canned chickpeas  
  • 1 1/2 cup steamed pumpkin  
  • Cooked Lifestyle Food Quinoa  
  • Carrot ribbons  
  • Brown dates  
  • Sliced figs  
  • Avocado  
  • Salad leaves  
  • Moroccan spice  
  • Dukkah to serve  
  • Pine nuts to serve  

Moroccan Spice Mix  

  • 1 tbsp Lifestyle Food Ground Coriander 
  • 1 tbsp Lifestyle Food Paprika 
  • ½ tbsp cracked black pepper 
  • ½ tbsp ground cumin 
  • 1 tsp ground cinnamon 
  • 1 tsp ground ginger 
  • 1 tsp cayenne pepper (optional – leave out for a mild spice mix) 
  • 1 tsp allspice 
  • ½ tsp brown sugar 



  1. Preheat the oven to 180 degrees Celsius.  
  2. Mix the spices and store them in a jar.  
  3. Place the chickpeas and pumpkin on a parchment paper-lined tray, drizzle with olive oil, 1 tbsp Moroccan spice, salt and pepper. Bake for 10- 15 minutes until crispy.  
  4. Cook the quinoa according to the instructions on the packet.  
  5. Plate the salad bowl with chickpeas, pumpkin, quinoa, salad leaves, sliced figs, dates, carrot ribbons, dukkah and pine nuts.
