Green Minestrone Soup  

Preparation time: 15 minutes  

Cook time: 30 minutes 

 

Ingredients  

  • 1 cup soaked Haricot beans  
  • 1 medium red onion diced  
  • Olive oil  
  • 1-2 crushed garlic cloves  
  • 1 cup diced potatoes  
  • 1 cup dry pasta  
  • 1 cup peas  
  • ⅓ cup diced carrots  
  • 3-4 cups vegetable stock  
  • ½ lemon juice  
  • Salt and pepper to taste  
  • ¼ cup basil pesto  
  • Serve with fresh basil  
  • Serve with bread  

Method  

  1. Add the oil to a pan, add the onion and garlic and fry until translucent.  
  2. Add the rest of the ingredients and let it simmer for 30-40 minutes until the beans have softened.  
  3. Serve the soup with crusty bread, fresh basil and fresh lemon slices.
