
Green Minestrone Soup

Cook time: 30 minutes
Ingredients
- 1 cup soaked Haricot beans
- 1 medium red onion diced
- Olive oil
- 1-2 crushed garlic cloves
- 1 cup diced potatoes
- 1 cup dry pasta
- 1 cup peas
- ⅓ cup diced carrots
- 3-4 cups vegetable stock
- ½ lemon juice
- Salt and pepper to taste
- ¼ cup basil pesto
- Serve with fresh basil
- Serve with bread
Method
- Add the oil to a pan, add the onion and garlic and fry until translucent.
- Add the rest of the ingredients and let it simmer for 30-40 minutes until the beans have softened.
- Serve the soup with crusty bread, fresh basil and fresh lemon slices.
