
Minty Matcha Bars

Ingredients
Base
- 1 ½ cup oats
- ½ cup almond flour
- 1 tbsp flax flour
- ½ cup soaked brown dates
- ¼ cup melted coconut oil
- 1 tsp vanilla extract
- Pinch of salt
Filling
- 1 ripe avocado
- 1 x 400ml can coconut cream
- ⅓ cup liquid sweetener of choice
- 1-2 tbsp Matcha powder
- ¼ cup mint leaves
- 1 tbsp vanilla extract
- Pinch of salt
Method
- Place all of the base ingredients in a high-speed blender and blend until well combined, add some water to smooth it out if necessary.
- Press the base into a parchment paper-lined square tin and place it in the fridge while you make the filling.
- Place all of the filling ingredients in a high-speed blender and blend until smooth, pour onto the base and place in the fridge to set for at least two hours.
- Once set, remove from the pan, slice, sprinkle more matcha on top and serve with extra mint.
