Chickpea Caesar Salad

Ingredients
- 2 cups canned and washed chickpeas
- ¼ cup nutritional yeast
- 1-2 tbsp olive oil
- 1 tsp garlic flakes
- Salt and pepper to taste
- 4 cups chopped kale
- ⅓ cup Lifestyle foods mayonnaise
- ¼ cup milk
- 1 tbsp nutritional yeast
- 1 tbsp lemon juice
- Salt and pepper to taste
- ⅓ cup grated vegan cheese
- ¼ cup hemp seeds
- 1 cup toasted bread cubes
Method
- Preheat the oven or air fryer to 180 degrees Celsius.
- Mix the chickpeas, nutritional yeast, oil, salt, and pepper and mix well.
- Pour onto a parchment paper-lined tin. Bake for 15-18 minutes until crispy.
- Wash and dice the kale or lettuce, drizzle with some oil and massage a bit and set aside.
- Mix the mayonnaise, milk, nutritional yeast, lemon juice, salt and pepper.
- Add the fried chickpeas to the salad, then drench with the dressing and vegan cheese, and mix well.
- Top with hemp seeds and toasted bread cubes.
