Chickpea Caesar Salad  

Chickpea Caesar Salad  

Preparation time: 10 minutes  

Cooking time: 15 minutes  



  • 2 cups canned and washed chickpeas  
  • ¼ cup nutritional yeast  
  • 1-2 tbsp olive oil  
  • 1 tsp garlic flakes  
  • Salt and pepper to taste  
  • 4 cups chopped kale  
  • ⅓ cup Lifestyle foods mayonnaise  
  • ¼ cup milk  
  • 1 tbsp nutritional yeast  
  • 1 tbsp lemon juice 
  • Salt and pepper to taste  
  • ⅓ cup grated vegan cheese  
  • ¼ cup hemp seeds  
  • 1 cup toasted bread cubes  


  1. Preheat the oven or air fryer to 180 degrees Celsius.  
  2. Mix the chickpeas, nutritional yeast, oil, salt, and pepper and mix well. 
  3. Pour onto a parchment paper-lined tin. Bake for 15-18 minutes until crispy.  
  4. Wash and dice the kale or lettuce, drizzle with some oil and massage a bit and set aside.  
  5. Mix the mayonnaise, milk, nutritional yeast, lemon juice, salt and pepper.  
  6. Add the fried chickpeas to the salad, then drench with the dressing and vegan cheese, and mix well.  
  7. Top with hemp seeds and toasted bread cubes.
