Gluten-Free Lamingtons
Gluten-free lamingtons for when you’re craving a nostalgic homemade bake.
Soft sponge cake, fruity jam, rich chocolate coating, and a generous layer of coconut, these Gluten-Free Lamingtons are a yummy twist on a nostalgic favourite. Made with almond flour and gluten-free oat flour, they deliver all the charm of traditional lamingtons while being easy to make at home.
Ingredients
For the Sponge Cake
- 100g almond flour
- 125g ground gluten-free oat flour
- 180g sugar
- 1½ tsp baking powder
- ½ tsp bicarbonate of soda
- Pinch of salt
- 125ml plant-based milk (soy or almond)
- 80ml neutral oil (sunflower or canola)
- 2 tsp apple cider vinegar
- 1 tsp vanilla paste
For the Filling & Coating
- 8 tbsp jam (raspberry, strawberry, or similar)
- 200g icing sugar
- 35g cocoa powder
- 125ml plant-based milk
- 30g coconut oil
- 75g dark chocolate
- 1 tsp vanilla extract
- 200g desiccated coconut
Method:
- Prepare the sponge: Preheat the oven to 175°C and line a rectangular baking tin with baking paper.
- Mix the dry ingredients: In a large bowl, combine the almond flour, oat flour, sugar, baking powder, bicarbonate of soda, and salt.
- Mix the wet ingredients: In a separate bowl, whisk together the milk, oil, apple cider vinegar, and vanilla paste.
- Make the batter: Pour the wet ingredients into the dry ingredients and mix until combined.
- Bake: Transfer the batter to the prepared tin and bake for 25–30 minutes, or until a skewer inserted into the centre comes out clean.
- Cool & Slice: Allow the cake to cool completely. Cut into approximately 16 equal squares, then carefully slice each square horizontally to create a top and bottom layer.
- Add the Jam Filling: Spread jam onto the bottom halves and sandwich with the top halves.
- Prepare the Chocolate Coating: Combine the icing sugar, cocoa powder, milk, coconut oil, and vanilla extract in a saucepan or heatproof bowl. Warm gently until combined, then add the dark chocolate and stir until melted and smooth.
- Coat the Lamingtons: Dip each sponge square into the chocolate coating, allowing any excess to drip off.
- Finish with Coconut: Roll each coated lamington in desiccated coconut until evenly covered.
- Serve: Allow the coating to set before serving.
