Ingredients
- 1 cup shredded coconut
- 1½ cups Lifestyle Food Rolled Oats
- ½ cup goji berries
- ⅓ cup Lifestyle Food Honey
- ⅓ cup macadamia butter
- Pinch of Lifestyle Food Himalayan Salt
- 1–2 tsp beetroot powder
- Splash of milk
- Chocolate, melted (for dipping)
- Sprinkles, to top
- Extra Lifestyle Food Himalayan Pink Salt, to finish
Method:
- Blend the Base: Add the shredded coconut, rolled oats, and goji berries to a food processor. Blend until the mixture resembles a coarse crumb.
- Add the Wet Ingredients: Add the honey, macadamia butter, and a pinch of pink salt. Blend again until the mixture starts to come together.
- Add Colour & Texture: Fold in the beet powder and a splash of milk until a soft, rollable dough forms.
- Shape & Chill: Roll into small balls and place onto a lined tray. Freeze until firm.
- Dip & Finish: Dip the chilled truffles into melted chocolate. Top with sprinkles and a light sprinkle of pink salt.
- Set & Store: Allow the chocolate to set. Store in the fridge or freezer until ready to enjoy.
