Made with puffed rice, coconut, almond butter, and a rich chocolate base using Lifestyle Food Reduced Sugar Hot Chocolate. They’re shaped into little nests and finished with a smooth chocolate centre and colourful sprinkles.
Ideal for festive treats, lunchboxes, or a simple sweet bite to keep in the fridge.
Ingredients
- ¼ cup reduced sugar hot chocolate
- ⅓ cup coconut oil
- ¼ cup almond butter
- ⅓ cup date caramel
- 1 cup brown puffed rice
- ½ cup shredded coconut
- Melted chocolate
- Sprinkles
Method:
- Mix the Base: In a bowl, combine the coconut oil, almond butter, date caramel, hot chocolate powder, and a pinch of salt. Mix until smooth.
- Add the Dry Ingredients: Fold in the puffed rice and shredded coconut until everything is evenly coated.
- Shape the Nests: Scoop the mixture onto a parchment-lined tray using a cookie scoop. Create a small well in the centre of each nest and place in the freezer until firm.
- Fill & Finish: Once set, spoon melted chocolate into the centre of each nest and top with sprinkles.
- Chill & Serve: Chill again until the chocolate is set, then enjoy.
