Chickpea Mayonnaise Sandwich
Ingredients:
1 cup Lifestyle Food Chickpeas – soaked and boiled until soft
4 tbsp Lifestyle Food Mayonnaise
1 large gherkin finely diced
⅓ of red onion, finely diced
1 tsp Lifestyle Food Dried Parsley
Salt and black pepper
1 tsp wholegrain mustard
For the sandwich:
4 sliced sourdough bread
Sliced cucumber
Lettuce
Carrot ribbons
Method:
- In a large bowl mash the chickpeas until they are half mashed so that there is a nice texture. Finely dice the rest of the ingredients and mix everything together.
- Spread onto the bread and top with cucumber, carrots and lettuce to build the sandwich.
- Enjoy it!
