Chickpea Mayonnaise Sandwich

 

Ingredients:

1 cup Lifestyle Food Chickpeas – soaked and boiled until soft

4 tbsp Lifestyle Food Mayonnaise

1 large gherkin finely diced

⅓ of red onion, finely diced 

1 tsp Lifestyle Food Dried Parsley

Salt and black pepper

1 tsp wholegrain mustard

For the sandwich:

4 sliced sourdough bread

Sliced cucumber

Lettuce

Carrot ribbons

Method:

  1. In a large bowl mash the chickpeas until they are half mashed so that there is a nice texture. Finely dice the rest of the ingredients and mix everything together. 
  2. Spread onto the bread and top with cucumber, carrots and lettuce to build the sandwich.
  3. Enjoy it!
