Bulgar Wheat Tortilla Soup
If the warm hearty soup doesn’t get the blood flowing, the jalapenos in the recipe might just do the trick.
Ingredients
- 1 cup dry Lifestyle Food Bulgar Wheat
- 1 red onion diced
- 2 minced garlic cloves
- 1 tsp ground cumin
- 1 tsp ground paprika
- 1 tsp ground coriander
- ½ tsp cinnamon
- Olive oil
- 1 can of canned black beans, washed
- 1 ½ fresh or frozen corn kernels
- 1 can of chopped tomatoes
- ¼ cup tomato paste
- 3-4 cups vegetable stock
To Serve
- Toasted tortilla chips
- Cream cheese
- Chilli flakes
- Chopped jalapeños
- Fresh cilantro
- Lime slices
Method
- Add a couple of dollops of olive oil to a medium cast-iron pot, add the diced onion, garlic, and the slices and fry until fragrant.
- Add in the black beans, corn and canned tomatoes, tomato paste, and vegetable stock.
- Simmer for about 10-15 minutes until the bulgur wheat has softened.
- Serve with toasted tortilla chips, vegan cream cheese, chilli flakes, fresh cilantro, and slices of limes.
