Apple Cider Mini Loaves

Warm, spiced, and perfectly sweet, these Apple Cider Mini Loaves are the ultimate fall-inspired treat. With the rich flavours of spiced apple cider, cinnamon, ginger, and nutmeg, they’re a comforting dessert or snack that will fill your home with the aromas of autumn. Whether you’re enjoying them fresh out of the oven or storing them for later, these loaves are sure to become a favourite!

Ingredients

  • 2 cups & 1 tbsp Lifestyle Food Apple Cider Vinegar
  • 2 tbsp Lifestyle Food Flax Flour
  • ¾ cup non-dairy milk
  • 1½ cups Lifestyle Food Quick Oats (blended to make oat flour, or use whole wheat flour)
  • 2 tsp ground cinnamon
  • 1 tsp ground ginger
  • ¼ tsp ground cardamom
  • ¼ tsp ground nutmeg
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp sea salt
  • ½ cup nut butter (such as almond butter)
  • ¼ cup coconut sugar or brown sugar
  • Sliced apple (to top)

Method:

  1. In a medium saucepan, bring the apple cider vinegar to a simmer over medium-high heat. Reduce the heat to medium and simmer for 30 minutes, stirring occasionally. The cider will reduce in volume, leaving you with just over ½ cup. Allow the reduced cider to cool. (This step can be done up to 3 days ahead of time.)
  2. Preheat your oven to 180°C (350°F) and spray or grease your mini loaf tin.
  3. Mix the ground flaxseed with 5 tablespoons of water in a small bowl and set aside to thicken.
  4. In a separate container, combine the non-dairy milk and apple cider vinegar to create a vegan “buttermilk.” Let it sit for at least 5 minutes to thicken.
  5. In a large bowl, whisk together the oat flour, cinnamon, ginger, cardamom, nutmeg, baking powder, baking soda, and sea salt.
  6. In a separate bowl, mix the reduced apple cider, flax eggs, vegan buttermilk, nut butter, and coconut sugar until smooth and uniform.
  7. Add the wet ingredients to the dry ingredients and use a spatula to stir until a thick batter forms.
  8. Divide the batter evenly between the mini loaf moulds. Top with sliced apple and a sprinkle of sugar for extra sweetness.
  9. Place the moulds on the middle rack of the oven and bake for 23-25 minutes, or until a toothpick inserted into the centre comes out clean.
  10. Remove the mini loaves from the oven and allow to cool completely in the tin. Enjoy with a dollop of butter, or freeze or store the rest for later!
