Tandoori Roast Chicken with Coconut Spinach

Ingredients

For the Coconut Spinach:

Lifestyle Food Olive Oil

1 bunch washed spinach shredded

2 onions cut into three pieces

½ tsp Lifestyle Food Ground Cumin

½ tsp Lifestyle Food Turmeric

1 tsp coriander

1 tin Lifestyle Food Coconut Milk

Salt

For the Tandoori chicken

4 cloves of garlic 

1-2 fresh red chillies 

2 tbsp Lifestyle Food Ginger 

½ a lemon 

1 cup plain yoghurt 

1 tsp Lifestyle Food Ground Cinnamon 

1 tsp Lifestyle Food Ground Cumin 

1 tsp Lifestyle Food Turmeric

1 tsp ground coriander 

1 tbsp Lifestyle Food Paprika 

1 whole chicken

Method

  1. Heat the oven to 220C.
  2. Pour some oil into a baking tray and then place in spinach. Mix with the coconut milk and spices and mix together. Put the onions on top.
  3. Pop the garlic, ginger, chillies, spices and yoghurt into a food processor and blend until smooth.
  4. Place half a lemon inside the chicken and then rub the marinade all over the chicken. Place it on top of the spinach and onions and place in the oven.
  5. Cook for 1.5 hours and then remove and serve.
