Tandoori Roast Chicken with Coconut Spinach
For the Coconut Spinach:
Lifestyle Food Olive Oil
1 bunch washed spinach shredded
2 onions cut into three pieces
½ tsp Lifestyle Food Ground Cumin
½ tsp Lifestyle Food Turmeric
1 tsp coriander
1 tin Lifestyle Food Coconut Milk
For the Tandoori chicken
4 cloves of garlic
1-2 fresh red chillies
2 tbsp Lifestyle Food Ginger
½ a lemon
1 cup plain yoghurt
1 tsp Lifestyle Food Ground Cinnamon
1 tsp Lifestyle Food Ground Cumin
1 tsp Lifestyle Food Turmeric
1 tsp ground coriander
1 tbsp Lifestyle Food Paprika
1 whole chicken
- Heat the oven to 220C.
- Pour some oil into a baking tray and then place in spinach. Mix with the coconut milk and spices and mix together. Put the onions on top.
- Pop the garlic, ginger, chillies, spices and yoghurt into a food processor and blend until smooth.
- Place half a lemon inside the chicken and then rub the marinade all over the chicken. Place it on top of the spinach and onions and place in the oven.
- Cook for 1.5 hours and then remove and serve.
