Seared Tuna and Quinoa Salad
Say goodbye to boring fish and chips and bland tinned tuna salads, and hello to this beautifully cooked – and packed with flavour – seared tuna salad.
Ingredients
For the tuna:
- 2 tuna steaks
- Lifestyle Food Olive Oil
- ½ lemon juice
- 1 tbsp Lifestyle Food Paprika
- Salt and pepper
- 2 tbsp sesame seeds
For the salad:
- 1 cup Lifestyle Food Quinoa
- ½ cup corn kernels
- 2 baby marrow, cubed
- ½ avocado
- 3 tbsp coriander
- Lettuce
- ½ lemon
- Salt and pepper
- Lifestyle Food Olive Oil
Method
- Marinate the tuna steaks in olive oil, lemon juice, paprika, salt, pepper and sesame seeds.
- While that marinates boil the quinoa until there are just tiny white dots in the centre. This ensures that they are not overcooked.
- Lightly fry the baby marrow cubes and corn kernels with some olive oil, lemon juice and salt and pepper then mix all of the salad ingredients together.
- Heat up a heavy-base pan with a little oil and fry your tuna, sear it so that the inside is still pink.
- Serve together and enjoy.
