- Lentil sprouts

- ⅓ cup smooth peanut butter
- ¼ cup soy sauce
- ¼ cup honey
- 1 tbsp rice vinegar
- 1 tsp miso paste (or chilli sauce)
- 1 tsp sesame oil
- Salt and pepper to taste
- Warm water (for smoothing the sauce)
Method:
- Prepare the noodles: start by slicing open the shirataki noodle packages. Dip the noodles in hot water and drain them thoroughly.
- Make the sauce: In a bowl, combine the peanut butter, soy sauce, honey, rice vinegar, miso paste (or chilli sauce), and sesame oil. Season with salt and pepper to taste. Add warm water gradually to smooth out the sauce as needed.
- Assemble the Wraps: On a clean surface, lay out salad leaves, this is for the base. Add 2-3 tablespoons of the prepared shirataki noodles on top of the salad leaves. Arrange the sliced veggies and lentil sprouts on top of the noodles. Drizzle 1-2 tablespoons of the peanut butter sauce over the veggies.
