Polenta Panzella Salad

For a light yet filling salad, Mariza from Life in the South blog has created this vibrant polenta panzella salad bowl. Perfect on it’s own or as a side at your next braai.

Ingredients

1 cup dry Lifestyle Food Polenta

2 cups boiling water (more if needed)

1/2 tsp salt

2 yellow smooth skinned peached

2 firm medium tomatoes

1/2 red onion sliced

Salt and pepper to taste

Olive oil

Lemon juice

Fresh basil

Method

1. Place the polenta, boiling water and salt in a saucepan and whisk well and bring to a boil on medium, add more water if needed. Let it cook for 8-10 minutes until cooked and scoop into a square tin of choice to set.

2. Place in the fridge to chill, before removing and slicing into cubes, shallow fry the cubes in olive oil until crispy.

3. Wash and slice the peaches, tomatoes, onions snd place them in a bowl, drizzle with olive oil, fresh lemon juice, salt and pepper.

4. Top with the polenta cubes, roasted seeds and fresh basil and serve.
