No-Bake Cinnamon Rolls with Prune Filling
Easy no-bake cinnamon rolls with oats, almonds and prune filling
No-bake cinnamon rolls are a raw snack made by rolling a soft oat and almond dough around a sticky prune and cinnamon filling, then chilling and slicing. They take about 25 minutes to make plus time in the fridge, make 6–8 mini rolls and are vegan when sweetened with maple syrup.
The filling is made from Lifestyle Food Pitted Prunes blended into a thick purée, which gives the rolls their dark swirl and plenty of sweetness. Lifestyle Food Gluten Free Almond Flour keeps the dough soft and tender without any baking.

How to make no-bake cinnamon rolls
- Start with the prune purée. Cover the prunes with hot water and leave to soak for 10 minutes. Drain, keeping a little of the water, then blend the prunes with 2–3 tbsp of the soaking water until thick and smooth. Measure out ½ cup.
- In a bowl, mix the oat flour, almond flour, cinnamon and salt.
- Add the almond butter, maple syrup or honey and vanilla extract, and mix until a crumbly dough forms.
- Add the plant milk 1 tbsp at a time until the dough is soft and pliable but not sticky.
- Place the dough between two sheets of baking paper and roll it into a rectangle about ½cm thick.
- Mix the prune purée, almond butter, cinnamon and salt.
- Peel off the top sheet of baking paper and spread the filling evenly over the dough, leaving a small border along one long edge.
- Using the baking paper to help, roll the dough up tightly from the opposite long side into a log.
- Wrap the log and refrigerate for 30–60 minutes to firm up.
- Slice into 6–8 mini cinnamon rolls with a sharp knife.

No-bake cinnamon rolls FAQs
- Can I use store-bought prune purée?
Yes. Use ½ cup of ready-made prune purée and skip the soaking and blending step.
- Are these no-bake cinnamon rolls gluten-free?
They can be. Almond flour is naturally gluten-free, so just make sure your oat flour is certified gluten-free, or blend gluten-free rolled oats yourself.
- Why is my dough cracking when I roll it?
It’s probably a little dry. Knead in another teaspoon or two of plant milk until it’s smooth and pliable, then roll it again between the baking paper.
- Can I use a different nut butter?
Yes. Lifestyle Food Smooth Peanut Butter works in both the dough and the filling, and gives the rolls a slightly saltier, nuttier flavour.
- How do I store no-bake cinnamon rolls?
Keep them in an airtight container in the fridge for up to 5 days. They’re best eaten slightly chilled, when the filling is firm.
Keep a bag of Lifestyle Food Pitted Prunes in the pantry for baking, smoothies and snacking.
