Pesto Pasta Salad

Life in the South has created another delicious recipe for us! This Pesto Pasta Salad is perfect on its own or as a side with your favourite dish.

Ingredients

4 cups cooked Lifestyle Food Gluten-Free Pasta of choice

Cashew Pesto

1 big hand-full fresh basil

3/4 cup Lifestyle Food Raw Cashews toasted to slightly brown

1/4 cup Lifestyle Food Nutritional Yeast

Salt and pepper to taste

1/2 cup canola oil

Other toppings

Vegan cheese

Toasted Lifestyle Food Cashews

Toasted pine nuts

Fresh bread

Method

1. Place the cooked pasta in a bowl and drizzle with olive oil.

2. Place all of the pesto ingredients in a high-speed blender and blend until smooth, pour in a glads container and place in the fridge until serving time.

3. Dress the pasta with a few tbsp of the pesto, add vegan cheese, toasted cashews and pine nuts and fresh herbs.

4. Serve and enjoy!
