Zesty Lemon Poppy Seed Cake: A Bright and Refreshing Treat

  • ½ cup icing sugar
  • 2 tbsp lemon juice

Method:

  1. Set your oven to 180°C (350°F). Grease and line a 5 cm deep round cake tin with baking parchment.
  2. Sift the self-rising flour, cornstarch, baking powder, bicarbonate of soda, and salt into a large mixing bowl.
  3. In a jug, mix the lemon zest, lemon juice, melted coconut oil, coconut cream, and plant-based milk until smooth.
  4. Slowly add the wet mixture to the dry ingredients, followed by the sugar, whisking until fully incorporated and smooth. Fold in the poppy seeds, ensuring even distribution throughout the batter.
  5. Pour the batter into the prepared tin, smoothing the surface. Bake for 45-50 minutes or until a skewer inserted into the centre comes out clean.
  6. Allow the cake to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  7. While the cake cools, sift the icing sugar into a bowl. Stir in the lemon juice to create a thick, pourable glaze. Adjust with more lemon juice or icing sugar as needed.
  8. Once cooled, drizzle the lemon icing over the top of the cake, letting it cascade down the sides for an elegant finish.
