Erythritol Caramel Peach Panna Cotta

Ingredients
- 400ml coconut cream
- 1/3 cup LSF Erythritol
- 1 tbsp cashew butter
- 1/3 tsp berry/beet powder
- 1 1/3 tsp agar agar
- 1 peach caramelised
- Chopped pistachios
Method
1. Place the coconut cream, Erythritol, cashew butter, vanilla, agar agar and a pinch of salt ina
sauce pan and bring to simmer for 8-10 minutes, whisking so it does not bowl over and no
lumps form.
2. Pour in to moulds to set for about 60 minutes.
3. Slice the peach and add it to a pan with some honey or syrup of choice and let it caramelize.
4. Remove the panna cotta and serve with the caramelised peaches and a sprinkle of chopped
pistachios.
