Gluten Free Cookies

Experience the joy of freshly baked, gluten-free cookies with a helping hand from Lifestyle Foods’ Vegan Baking Aid!  Elevate your baking game with ease, creating delectable treats that everyone can enjoy.

Ingredients
  • 1/2 cup almond flour
  • 1 cup coconut flour
  • 1/3 cup tapioca flour
  • 1/3 cup LSF vegan baking aid
  • 130ml coconut milk
  • 100g soft margarine or vegan butter or coconut oil
  • 1 tbsp baking powder
  • 1 tbsp brown sugar
  • 1/3 tsp salt
  • 2 tbsp nutritional yeast
  • 2 tbsp apple cider vinegar
  • 1-2 tsp dried herbs
  • Bagel seasoning to top
Method

1. Place the flours, Baking powder, salt, sugar, nutritional yeast and LSF baking aid in a bowl.
2. Rub in the margarine or vegan butter and add in the herbs too.
3. Gradually add the milk and apple cider vinegar until it starts to come together.
4. Spread on to some parchment paper and fold over with another piece of baking paper on top and roll about 3cm flat. Press out with a cookie press and then place on a parchment paper lined baking tray, brush with melted coconut oil and sprinkle on some herbs and everything bagel seasoning.
5. Bake for 18-20 minutes at 180 degrees Celsius. Serve and enjoy! Or freeze for versatility.
