Ingredients:
For the base:
- 1 cup rolled oats
- 1/3 cup pistachios or cashews
- 1 cup pitted dates
- 1 tsp Lifestyle Food Gold Roast Espresso
- 1-2 tbsp coconut oil
- 1 tsp vanilla extract
- Pinch of salt
For the Caramel Filling:
- 1½ cups soaked pitted dates
- ⅓ cup smooth nut butter (cashew or pistachio)
- Water (as needed to smooth out)
- Pinch of salt
For the Nut Butter Layer:
- Pistachio and cashew nut butter or just cashew nut butter
For the Topping:
- 150g melted dark chocolate
- Crushed pistachios
- Cacao nibs
Method:
- Prepare the base: In a high-speed blender, combine the rolled oats, pistachios or cashews, pitted dates, Lifestyle Food Gold Roast Espresso, coconut oil, vanilla extract, and a pinch of salt. Blend until the mixture comes together, adding a bit of water if necessary to achieve a dough-like consistency.
- Press the dough firmly into a parchment paper-lined baking tin, ensuring to press it up along the edges using the base of a glass or a spatula. Place the tin in the oven and bake the base for 15 minutes until golden and crisp.
- Prepare the caramel filling: Start by soaking the pitted dates until soft, then drain them and blend until you have a smooth caramel consistency. Transfer the caramel to a glass container and keep it cool until ready to use.
- Once the base has baked and cooled slightly, spread 4-5 heaped tablespoons of the prepared caramel evenly over the base. Pop the tin into the freezer for about 20 minutes to allow the caramel layer to set slightly.
- After the caramel layer has firmed up, spread a layer of nut butter over the caramel layer. Return the tin to the freezer for another brief freeze.
- Pour the melted dark chocolate over the nut butter layer, spreading it evenly with a spatula. Sprinkle the top of the tart with crushed pistachios and cacao nibs for a decorative touch.
- Once all the layers are assembled, return the tart to the freezer and allow it to set completely for a few hours or overnight.
- When ready to serve, remove the tart from the freezer and let it sit at room temperature for a few minutes to soften slightly. Slice into portions and enjoy the rich, creamy, and utterly decadent flavours of this coffee-infused masterpiece!
