
Chickpea Lettuce Cups
This vegan version of tuna salad cups is almost better than the original and is made using chickpeas.
Ingredients
- 1 cup cooked or canned chickpeas
- ¼ cup chopped celery
- ⅓ cup diced apple
- ¼ cup dried cranberries
- 1 tsp dijon mustard
- 1 tbsp chopped dill
- 1 tbsp honey
- ⅓ cup lifestyle foods mayonnaise
- Salt and pepper to taste
- Lettuce leaves
Method
- Mash the chickpeas, add the salad ingredients, and mix well.
- Chill for 30 minutes before serving in the lettuce leaves with lemon slices and fresh dill.
