Chickpea Lettuce Cups

This vegan version of tuna salad cups is almost better than the original and is made using chickpeas.


  • 1 cup cooked or canned chickpeas  
  • ¼ cup chopped celery  
  • ⅓ cup diced apple  
  • ¼ cup dried cranberries  
  • 1 tsp dijon mustard  
  • 1 tbsp chopped dill  
  • 1 tbsp honey  
  • ⅓ cup lifestyle foods mayonnaise  
  • Salt and pepper to taste  
  • Lettuce leaves  


  1. Mash the chickpeas, add the salad ingredients, and mix well. 
  2. Chill for 30 minutes before serving in the lettuce leaves with lemon slices and fresh dill.
