Brown Rice Sushi Sandwiches
The next time a sushi craving hits, you can whip up your own using this really easy recipe.
Ingredients
- 1 ½ cups uncooked brown rice (cook according to instructions)
- Rice wine vinegar
- Protein of choice
- Sliced cucumber
- Sliced cabbage
- Sliced radishes
- Sliced avocado
- Spicy mayonnaise
- Soya sauce for dipping
- Toasted sesame seeds
- Nori sheets
Method
- Cook the rice according to the cooking instructions on the box. Once cooked add 1-2 tbsp rice wine vinegar. Leave to chill.
- Place the nori sheets on a dry surface. Turn it until you have one angle showing up making a diamond shape.
- Add 2-3 tbsp cooked rice in the centre, and add cooked protein, veggies and some spicy mayo.
- Fold over the edges, using water to make them stick. Place face down with the open edges at the bottom so they stay stuck together.
- Slice the sandwiches and serve with some soya sauce, pickled ginger and more mayonnaise.
