Brown Rice Sushi Sandwiches

The next time a sushi craving hits, you can whip up your own using this really easy recipe.

Ingredients  

  • 1 ½ cups uncooked brown rice (cook according to instructions)  
  • Rice wine vinegar  
  • Protein of choice
  • Sliced cucumber  
  • Sliced cabbage  
  • Sliced radishes  
  • Sliced avocado  
  • Spicy mayonnaise
  • Soya sauce for dipping  
  • Toasted sesame seeds 
  • Nori sheets  

Method  

  1. Cook the rice according to the cooking instructions on the box. Once cooked add 1-2  tbsp rice wine vinegar. Leave to chill.  
  2. Place the nori sheets on a dry surface. Turn it until you have one angle showing up making a diamond shape.  
  3. Add 2-3 tbsp cooked rice in the centre, and add cooked protein, veggies and some spicy mayo.  
  4. Fold over the edges, using water to make them stick. Place face down with the open edges at the bottom so they stay stuck together.  
  5. Slice the sandwiches and serve with some soya sauce, pickled ginger and more mayonnaise.
