Brown Lentil Stuffed Gem Squash

Ingredients

  • 4 gem squash, sliced open on top and seeds scooped out
  • 1 cup Lifestyle Food Brown Lentils, cooked
  • 1 cup rice of choice, cooked
  • 1 small red onion finely diced
  • Olive oil
  • 2 cups shiitake mushrooms or mushrooms of choice
  • 1 crushed garlic clove
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • Baby herbs
  • Toasted pine nuts

Method

1. Place the gem squash upside down with the tops that are open upside down in some salt water and bring to a simmer and boil until soft.

2. Add the onion to the pan and fry on some olive oil until translucent, add in the diced shiitake mushrooms, and garlic, and fry until brown before adding in the soy sauce and honey.

3. Add in the cooked lentils and rice and sauté a bit more until everything is well-infused.

4. Remove and scoop the rice filling into the cooked gem squash, and serve with fresh herbs and toasted pine nuts.
