1. Hearty Lentil and Brown Rice Soup
A filling bowl packed with pantry heroes like brown lentils and ready-to-eat brown rice.
Ingredients:
- 1 cup brown lentils, rinsed
- 250g Lifestyle Food Ready To Eat Brown Rice
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 6 cups vegetable broth
- Salt and pepper to taste
- 1 tbsp Lifestyle Food Olive Oil
Instructions:
Heat olive oil in a large pot. Sauté onion, carrots, and celery until soft. Add garlic, cumin, and paprika and cook for a minute. Add lentils, rice, and broth. Simmer for 45–50 minutes until everything is tender. Season to taste and top with chopped parsley or chilli flakes.
2. Chickpea, Quinoa & Spinach Soup
Nutty, herby, and vibrant — this one is as good for the soul as it is for your taste buds.
Ingredients:
- 1 tbsp Lifestyle Food Coconut Oil
- 1 onion, chopped
- 1 tsp Lifestyle Food Turmeric
- 1 tsp Lifestyle Food Coriander
- 1 can chickpeas, drained
- ½ cup Lifestyle Food White Quinoa
- 6 cups vegetable stock
- 2 cups baby spinach
- Juice of ½ a lemon
- Salt and pepper to taste
- Tahini or yoghurt to serve
Instructions:
Sauté onion in coconut oil until soft. Stir in turmeric and coriander. Add chickpeas, quinoa, and stock. Simmer for 20 minutes until quinoa is fluffy. Toss in spinach and lemon juice. Serve with a swirl of tahini or dollop of yoghurt.
3. Creamy Roasted Butternut & Sunflower Seed Soup
Silky smooth with natural sweetness and a nutty finish.
Ingredients:
- 1 medium butternut squash, peeled and cubed
- 1 tbsp Lifestyle Food Olive Oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- ¼ cup Lifestyle Food Sunflower Seeds
- 1 tsp Lifestyle Food Cinnamon
- Salt and pepper to taste
Instructions:
Roast butternut at 200°C for 25–30 mins. Meanwhile, sauté onion and garlic in a pot. Add roasted butternut, broth, seeds, and cinnamon. Simmer 10 mins. Blend until smooth. Top with toasted seeds for crunch.
4. Tuscan Bean & Barley Soup with Pumpkin Seeds
A classic, hearty soup with a Lifestyle Food twist.
Ingredients:
- 1 tbsp Lifestyle Food Olive Oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can cannellini beans, drained
- ½ cup Pearl Barley
- 5 cups vegetable broth
- 1 tsp Lifestyle Food Thyme
- 1 tsp Lifestyle Food Oregano
- 2 handfuls chopped kale or Swiss chard
- 2 tbsp Lifestyle Food Pumpkin Seeds
- Salt and pepper to taste
Instructions:
Sauté onion, garlic, carrot, and celery in olive oil. Stir in beans, barley, herbs, and broth. Simmer 35–40 minutes. Add greens and cook another 5 mins. Serve with a sprinkle of pumpkin seeds and a drizzle of olive oil.
