Ingredients
- 1 cup coconut or almond flour
- 1 cup rolled oats
- 1–2 scoops vanilla protein powder
- ⅓ cup coconut oil
- Dash of milk (if needed)
- ⅓ cup goji berries
- ¼ cup pistachios
- Dash of cinnamon
- 1½ tbsp corn starch
- Pinch of salt
- 1 cup blueberries
- 1¼ cups chopped apples
- 1–2 tsp honey
- 1 tsp lemon juice
Method:
- Prepare the Topping: In a bowl, combine the coconut flour, rolled oats, protein powder, coconut oil, milk, cinnamon, and salt. Mix well, then fold in the goji berries and pistachios. The mixture should be crumbly but hold together slightly.
- Make the Fruit Filling: In another bowl, toss the blueberries and apples with honey, lemon juice, and cornstarch until evenly coated.
- Assemble: Spoon the fruit mixture into small oven-safe bowls or ramekins. Top generously with the oat and nut mixture.
- Bake or Air-Fry: Bake (or air-fry) at 180°C (350°F) for 10–15 minutes, or until the topping is golden and the fruit filling is bubbling and jammy.
