Ingredients
For the Loaf:
- 2½ cups self-raising flour
- 1 cup brown sugar (or coconut sugar or granulated sugar)
- 3 tsp baking powder
- ¼ tsp baking soda
- 1 tsp ground cinnamon
- Pinch of salt (optional)
- ½ cup milk
- ½ cup strong brewed rooibos tea
- ½ cup melted oil
- 1 tbsp apple cider vinegar (optional)
- 1 tsp vanilla extract (optional)
For the Apple Pie Filling:
- 2 cups chopped pink apples
- ⅓ cup sugar
- 1 tbsp cinnamon
For the Frosting:
- 1½ cups icing sugar
- 1 tablespoon milk
Method:
- In a medium-sized bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, and salt (if using).
- In a separate bowl, pour in the milk, brewed rooibos tea, melted oil, apple cider vinegar, and vanilla extract. Stir well until the mixture is smooth and there are no lumps.
- In a small bowl, mix the chopped apples with sugar and cinnamon until the apples are well coated.
- Line a loaf tin with parchment paper or grease it with non-stick spray. Pour half of the cake batter into the tin. Top with half of the apple mixture. Pour the remaining batter over the apples and finish by topping with the remaining cinnamon apples.
- Bake the loaf at 180°C (350°F) for 40-45 minutes or until the top is golden brown and a skewer inserted into the centre comes out clean.
- Let the loaf cool in the tin for a few minutes, then transfer it to a wire rack. While the loaf cools, prepare the glaze by whisking the icing sugar and milk together until smooth. Drizzle the glaze over the cooled loaf.
