Vietnamese style sweet potato tortillas with lime, coriander and spinach hummus and seared ostrich
Wraps are easily one of the simplest and easiest ways to whip up a quick dinner. An Earthen Life has created this delicious recipe that includes homemade tortillas, hummus and a delicious filling that will have you unleashing your inner MasterChef in no time.
Ingredients
Tortilla:
1 large sweet potato roasted until soft
1 cup Lifestyle Foods Dried Chickpeas ground into a flour
1 cup cake flour
Salt
Pepper
Hummus:
1 cup Lifestyle Foods Dried Chickpeas, soaked overnight
1 garlic clove
¼ cup Lifestyle Foods Olive Oil
1 handful baby spinach
1 handful coriander
Salt
3 tablespoon tahini
3 tablespoon lime juice
Filling:
Ostrich fillet
Lettuce
Cucumber
Mint
Coriander
Lime
Spring onion
Method:
- Peel the skin off the roasted sweet potato and mash with a fork. Then mix in the chickpea flour, salt and the normal flour. You may need to add a little water or a little more flour depending on how big your sweet potato is.
- Roll out the dough into wrap sized rounds and toast in an oiled pan. This would also be great on a store-bought wrap if you didn’t feel like making your own tortillas, but man they are tasty.
- In the meantime, blend all the hummus ingredients together, this should form a nice spreadable consistency, remember to check your lime and salt.
- Sear the ostrich and slice up the rest of your ingredients then place it all in the wrap and enjoy immediately or pack for your lunch the next day. This is a great way to use leftovers.
