Thai Green Curry with Jackfruit

Thai Green Curry with Jackfruit  

Preparation time: 10 minutes  

Cook time: 15 minutes  

Serves: 2-3  



  • 1 tbsp Lifestyle Food Coconut Oil 
  • 3/4 cup canned jackfruit, torn and pits removed 
  • 1 medium onion, chopped   
  • 2 garlic cloves, chopped   
  • 1 med zucchini, chopped   
  • 1/2 yellow pepper 
  • 1 cup mixed snap peas and baby corn 
  • 2 tbsp green curry paste    
  • 1 can Lifestyle Food Coconut Milk    
  • 1 tbsp coconut sugar  
  • 2 tbsp soy sauce  
  • a squeeze of lime juice 
  • Fluffy rice to serve  
  • Fresh cilantro serve  



  1. Heat the coconut oil in a pan on medium-high heat. Add the jackfruit and cook on each side for 1-2 minutes until crispy and golden brown. 
  2. Transfer the jackfruit to a bowl then heat the remaining 1 tbsp of oil in the pan. 3. Add the onion and garlic and let cook for 2 minutes. Then add the zucchini and red pepper and let cook for another 2-3 minutes.  
  3. Add the remainder of the ingredients and mix everything together until well combined. Add back the jackfruit and mix.  
  4. Taste and adjust seasoning if needed, then remove from heat and serve immediately with coconut milk, lime, fluffy rice and fresh cilantro.
