
Roasted Nut & Chia Seed Bars

Ingredients:
- 1½ cups roasted cashews & pecans
- ⅓ cup chia seeds
- 1¼ cups soaked brown dates
Toppings:
- Peanut butter
- Melted chocolate
- Cacao nibs
Method:
- Roast and Blend: Start by roasting the cashews and pecans until they release their rich aroma. Once roasted, set them aside to cool. In the meantime, blend soaked brown dates into a smooth paste.
- Mix and Combine: In a large bowl, combine the roasted nuts, chia seeds, and the date paste. Mix these ingredients thoroughly until well combined.
- Press and Top: Pour the mixture into a square tin and press it down firmly to create an even layer. Spread a generous amount of runny peanut butter on top, smoothing it out to cover the entire surface. Next, drizzle melted chocolate over the peanut butter layer and sprinkle cacao nibs for added crunch and flavour.
- Freeze and Slice: Place the tin in the freezer and allow the bars to set. This will typically take a couple of hours. Once the bars are firm, take them out and slice them into individual bars.
