Summer Satay Shirataki Noodle Salad

For the Satay Sauce:

  • 120g smooth peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • ½ clove garlic
  • 1 thumb-sized piece of ginger
  • 60ml coconut milk

For the Salad:

  • 1 block tofu, pressed and cubed, or substitute with cooked chicken
  • 1 pack Lifestyle Foods Shirataki Noodles, Fettucine
  • 1 head red cabbage, shredded
  • 1 romaine lettuce heart, shredded
  • 3 large carrots, grated
  • 1 lettuce, chopped
  • 2 small red and yellow peppers, thinly sliced
  • 2 salad onions, sliced
  • ½ pickled red onion, thinly sliced
  • 60g fresh coriander, chopped
  • 30g cashews, chopped
  • 2 limes
  • Optional: a sprinkle of sesame seeds and micro-herbs


  1. Prepare the sauce: In a bowl, combine peanut butter, soy sauce, honey, sesame oil, rice vinegar, garlic, ginger, and coconut milk. Add the mixture to your blender and blitz until well-combined.
  2. Prepare the tofu/chicken: If using tofu, press it to remove excess water, then cut into cubes. Drizzle with ⅓ of the satay sauce, and air fry the tofu. Alternatively, prepare cooked chicken if preferred.
  3. Prepare the salad: In a large bowl, combine shredded red cabbage, shredded romaine lettuce, grated or julienned carrots, chopped lettuce, sliced peppers, sliced salad onions, pickled red onion, and chopped fresh coriander. Drain the Shirataki Noodles and add them to the bowl. Add the tofu or cooked chicken to the salad. Drizzle the satay sauce over the salad and toss until everything is well-coated.
  4. Toppings: top with chopped cashews, a sprinkle of sesame seeds, and micro-herbs for added flair. Squeeze lime over the salad before serving.
