Rice Cake Brownies Slices

These no-bake chocolate brownies are made using a very special ingredient… Crushed rice cakes!


  • 1 packet yoghurt-coated rice cakes  
  • ½ cup nut butter  
  • ⅓ cup honey  
  • ¼ cup coconut oil  
  • ¼ cup cacao powder  
  • Melted chocolate  
  • Almond flake’s  



  1. Crush the rice cakes in a ziplock bag and place them in a bowl. Melt the nut butter, coconut oil, honey, and cacao powder in a separate bowl. Mix well.  
  2. Pour the nut butter mixture over the rice cakes and mix.  
  3. Press into a parchment paper-lined square tin. Let it set in the fridge for about an hour.  4. Pour over the melted chocolate and almond flakes and place in the fridge to set.  
  4. Remove once set and slice.
