Protein Cheesecake Cups
Decadent and packed with protein? Yes, please!
INGREDIENTS:
For the base of each cup
Lifestyle Food Sugar-free Choc Chip Cookie
For the cheesecake filling:
- 1 tub fat-free cottage cheese
- 1/2 cup fat-free plain yoghurt
- 1 egg
- 2 egg whites
- 1 tbsp Lifestyle Food Coconut Oil
- 1 tsp vanilla essence
- 2 servings of whey protein
- 1/3 cup Lifestyle Food Xylitol
- 2 tbsp Lifestyle Food Coconut Flour
- 1 tbsp cocoa
Toppings:
- 1/2 a mint Grenade protein bar, chopped
- 1/2 a Canderel dark chocolate bar, melted
METHOD:
- Preheat oven to 180 degrees and spray a muffin tray with some cooking spray.
- Add a cookie to each holder of the muffin tray to act as the base. Set aside.
- To a blender, add the wet ingredients and blend until smooth and creamy.
- Add the remainder of the ingredients, except the optional add in’s and mix for about 45 seconds. You will notice that the longer you mix, the thicker the batter will get.
- Stir in the chopped or crushed sweets.
- Spoon equal amounts into each muffin holder.
- Pop the muffin tray onto a baking tray followed by pouring some boiling water into the baking tray. Put the tray into the oven to bake for 15 to 20 minutes.
- Once cooled, decorate with the melted dark chocolate, chopped protein bar and any leftover crushed candies.
