Pecan Pumpkin Bread Puddings

Ingredients:

  • 2 cups soft white bread, cubed
  • 1 cup Lifestyle Food Pecan Nuts 
  • Brown sugar, for sprinkling

Method:

  1. Combine the cooked pumpkin, milk, cornstarch, Lifestyle Food Honey, Cinnamon, Ginger, vanilla extract and nutmeg in a blender. Blend until smooth and creamy, adjusting the milk as needed to get the right pouring consistency.
  2. Preheat your oven to 180 degrees Celsius. Evenly distribute the cubed bread among your serving ramekins. Pour the spiced pumpkin sauce over the bread, making sure each piece is well coated.
  3. Insert pecans between the soaked bread cubes for added texture and flavour. Sprinkle brown sugar over the top for a sweet, caramelised finish.
  4. Place the ramekins on a baking sheet and bake in the preheated oven for 10-15 minutes, until the tops are golden and the pudding is bubbly.
  5. Let the puddings cool slightly before serving. These are best enjoyed warm, fresh from the oven.
