PB & J Blondies

Ingredients
- 120g butte (or vegan butter)
- 250g light brown soft sugar
- 200g Lifestyle Food Smooth Peanut Butter
- 90g full-fat coconut cream or yoghurt
- 1 tbsp vanilla extract
- 2 cups Lifestyle Food Self-Raising Flour (or flour of choice)
- 2 tbsp corn starch
- 1 tsp baking powder
- ¼ tsp bicarbonate of soda
- ¼ tsp salt
- 100g strawberry chia jam (or jam of choice)
Method:

Preheat your oven to 180°C (350°F) and grease a square cake tin. Line the tin with baking parchment for easy removal.

In a pan or microwave, melt the vegan butter, sugar, peanut butter, coconut cream (or yoghurt), and vanilla extract over low heat, stirring until smooth. Remove from the heat once everything is melted and well combined.

Sift together the flour, corn starch, baking powder, bicarbonate of soda, and salt. Gradually add this mixture to the wet ingredients, stirring until the batter is smooth. The batter will be thick, but that’s perfect!

Scrape the batter into the prepared cake tin and spread it out evenly.

Add dollops of strawberry chia jam (or your jam of choice) on top of the batter. Use a knife or skewer to gently swirl the jam into the batter for a marbled effect.

Bake the blondies in the preheated oven for about 25 minutes, or until a skewer inserted into the center comes out clean.

Allow the blondies to cool completely in the pan before slicing into squares and enjoying!
