Ingredients
For the Tea
- 2 ginger green tea bags
- ¼ cup honey
- Boiling water to steep
For the Strawberry Ginger Compote
- 1–2 cups chopped strawberries (fresh or frozen)
- 1 tsp lemon juice
- 1–2 tbsp honey
- 1 tsp grated ginger
To Serve
- Fresh chopped strawberries
- Crushed ice
- Fresh mint
- Extra honey (optional)
Method:
- Steep the Tea: Add the green tea sachets to a jug or pot and pour over boiling water. Stir in the honey and let the tea steep until fragrant. Allow to cool completely.
- Make the Compote: In a saucepan, combine the strawberries, lemon juice, honey, and grated ginger. Bring to a gentle simmer and cook until jammy. Add a splash of water if needed. Mash lightly until smooth and let it cool.
- Assemble the Iced Tea: Add 1–2 tablespoons of the compote to a glass. Fill the glass with crushed ice, pour in the cooled green tea, and top with fresh strawberries, mint, and a drizzle of honey if desired.
- Serve: Stir gently and enjoy chilled.
