Buckwheat Cucumber Radish Salad
A vibrant salad to add a pop of flavour to any meal.
- 1 cup buckwheat groats toasted in a pan or boiled with some salt
- ½ cup sliced cucumber
- ⅓ cup diced olives
- ⅓ cup sliced radishes
- ½ cup vegan feta
- Fresh mint to serve
- 1 tbsp dijon mustard
- 1-2 tbsp honey or sweetener of choice
- 1 tbsp apple cider vinegar
- 1-2 tbsp olive oil
- Salt and pepper to taste
- Place all of the salad ingredients in a bowl and mix well.
- Place on a plate and mix the dressing, pour over the salad and serve with fresh bread.
