Buckwheat Cucumber Radish Salad

Buckwheat Cucumber Radish Salad

A vibrant salad to add a pop of flavour to any meal.

 

Ingredients  

  • 1 cup buckwheat groats toasted in a pan or boiled with some salt  
  • ½ cup sliced cucumber  
  • ⅓ cup diced olives  
  • ⅓ cup sliced radishes  
  • ½ cup vegan feta  
  • Fresh mint to serve  

 

Sauce  

  • 1 tbsp dijon mustard  
  • 1-2 tbsp honey or sweetener of choice  
  • 1 tbsp apple cider vinegar  
  • 1-2 tbsp olive oil  
  • Salt and pepper to taste  

 

Method  

  1. Place all of the salad ingredients in a bowl and mix well.  
  2. Place on a plate and mix the dressing, pour over the salad and serve with fresh bread.
