Super Green Falafels

Falafels are a great way to add protein to any dish – or simply serve as a snack.


  • 2 cups Chickpeas soaked in water overnight
  • 1 tbsp Lecithin granules
  • Bunch fresh cilantro
  • 1 tbsp tahini
  • Juice of half lemon
  • 1 tbsp nutritional yeast
  • 1-2 tbsp chickpea flour
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • Salt and pepper
  • Hummus or tahini to serve



1. Drain the chickpeas and place the chickpeas, soy Lecithin, cilantro and the rest of the ingredients except the flour in a blender.

2. Blend and scrape down the sides until the cilantro is well blended & the falafel mixture starts to form, add flour accordingly until you have a dough that can stick and form into falafel patties.

3. Place in the fridge to chill for an hour, remove and scoop into balls and shallow fry or air fry with some olive oil until brown.

4. Serve with dip & sliced lemon.
