Strawberry Chia Pudding Pops

Ingredients
For the Chia Pudding:
- ⅓ cup Lifestyle Food Chia Seeds
- 1¼ cups coconut milk
- ¼ cup honey
- 1 scoop vanilla protein powder
For the Strawberry Chia Jam:
- 2 cups fresh or frozen strawberries
- ⅓ cup Lifestyle Food Chia Seeds
- ¼ cup honey
- 1-2 tbsp lemon juice
Method:
- Make the Chia Pudding: In a bowl, mix the chia seeds, coconut milk, honey, and vanilla protein powder. Stir well and set aside to thicken.
- Prepare the Strawberry Jam: While the pudding thickens, make the jam. Add strawberries, chia seeds, honey, and lemon juice to a saucepan. Cook on medium-low until the mixture becomes jammy. Let it cool, then transfer to a glass container and refrigerate.
- Assemble the Pops: In popsicle molds, layer a few tablespoons of chia pudding, followed by a spoonful of strawberry chia jam, and some fresh sliced strawberries. Repeat until filled.
- Freeze: Place the molds in the freezer until the pops are fully set.
