Method:

  1. Make the Chia Pudding: In a bowl, mix the chia seeds, coconut milk, honey, and vanilla protein powder. Stir well and set aside to thicken.
  2. Prepare the Strawberry Jam: While the pudding thickens, make the jam. Add strawberries, chia seeds, honey, and lemon juice to a saucepan. Cook on medium-low until the mixture becomes jammy. Let it cool, then transfer to a glass container and refrigerate.
  3. Assemble the Pops: In popsicle molds, layer a few tablespoons of chia pudding, followed by a spoonful of strawberry chia jam, and some fresh sliced strawberries. Repeat until filled.
  4. Freeze: Place the molds in the freezer until the pops are fully set.
  5. Serve: Once frozen, remove from the molds and enjoy a creamy, fruity frozen treat!
