Ingredients
- 1 cup fresh raspberries
- ½ cup jam of choice (your favourite flavor)
- Puff pastry sheet
- Melted butter (for brushing)
- Lifestyle Food Xylitol (for sprinkling)
Method:
- Roll out the puff pastry on a flat surface. Smear a generous layer of your chosen jam over the surface, leaving a small border around the edges. Smash the raspberries gently with a fork and sprinkle them over the jam. Finally, sprinkle a light dusting of xylitol on top for a subtle sweetness.
- Fold the puff pastry over the raspberries and jam from both sides, then fold the top over like an envelope, enclosing the filling inside. Chill the pastry in the fridge for 30-40 minutes to allow it to set.
- While the pastry chills, preheat your oven to 180°C (350°F).
- After chilling, slice the pastry into 1½ cm slices and place them face-up on a baking sheet. Brush the tops with melted butter to help them crisp up nicely.
- Place the baking sheet in the oven and bake for 15-20 minutes or until the pastries are golden brown and puffed up.
