Peach Poppy Nachos
It’s time to try something new… It’s time to discover breakfast nachos.
Ingredients
- 2 fresh peaches sliced
- 1 tbsp honey
- 1/2 tsp cinnamon
Nachos
- 3 small tortillas sliced into triangles
- 1 tbsp coconut sugar
- 1 tbsp coconut oil
Stovetop Granola
- 1 cup rolled oats
- 1/4 cup shredded coconut
- 1/4 cup poppyseeds
- 1 tbsp nut butter
- 2 tbsp coconut oil
- 2 tbsp honey
- 1 tsp cinnamon
- Pinch of salt
Method
- Heat up a skillet with some coconut oil, add the peaches and fry for a few minutes, add in the honey and cinnamon and let it caramelise. Remove once beautifully caramel.
- Place the sliced tortillas in a bowl, add in the sugar and melted oil and mix well. Place in the airfryer or in the oven to crisp up for a few minutes.
- Place all of the granola ingredients in a pan and toast for 10-15 minutes, stirring every now and again until toasted. Remove to cool.
- Ensemble the nachos, and tortilla chips as your first layer, then the grilled peaches and then the granola. Lastly add some ice cream, and fresh thyme and enjoy!!
