Peach Poppy Nachos

It’s time to try something new… It’s time to discover breakfast nachos.


  • 2 fresh peaches sliced  
  • 1 tbsp honey  
  • 1/2 tsp cinnamon  


  • 3 small tortillas sliced into triangles  
  • 1 tbsp coconut sugar  
  • 1 tbsp coconut oil  

Stovetop Granola  

  • 1 cup rolled oats  
  • 1/4 cup shredded coconut  
  • 1/4 cup poppyseeds  
  • 1 tbsp nut butter  
  • 2 tbsp coconut oil  
  • 2 tbsp honey  
  • 1 tsp cinnamon  
  • Pinch of salt  


  1. Heat up a skillet with some coconut oil, add the peaches and fry for a few minutes, add in the  honey and cinnamon and let it caramelise. Remove once beautifully caramel.  
  2. Place the sliced tortillas in a bowl, add in the sugar and melted oil and mix well. Place in the  airfryer or in the oven to crisp up for a few minutes.  
  3. Place all of the granola ingredients in a pan and toast for 10-15 minutes, stirring every now  and again until toasted. Remove to cool.  
  4. Ensemble the nachos, and tortilla chips as your first layer, then the grilled peaches and then the  granola. Lastly add some ice cream, and fresh thyme and enjoy!!
