Ingredients:

  • ¼ cup diced ginger
  • 1-2 crushed garlic cloves
  • 1 cup snap peas
  • 1 cup diced baby corn
  • 2 cups mixed wild mushrooms
  • 1 tsp miso paste
  • 1 tsp turmeric powder
  • 3 cups Lifestyle Food Coconut And Almond Milk
  • 1-2 cups vegetable stock
  • Salt and pepper to taste

Serve with:

  • 1-2 cups crispy sautéed tofu
  • Chopped spring onion
  • Chopped red onion
  • Fresh cilantro
  • Sesame seeds

  • Peanut chili oil crunch

Method:

  1. In a large pot, add the diced ginger, crushed garlic, snap peas, baby corn, mixed wild mushrooms, miso paste, and turmeric powder. Pour in the Lifestyle Food Coconut And Almond Milk and vegetable stock.
  2. Bring the mixture to a simmer over medium heat. Let it cook until the vegetables are tender, about 15-20 minutes. Season with salt and pepper to taste.
  3. While the soup is simmering, sauté the tofu in a pan until it is crispy on all sides. This will add a delightful texture to your soup.
  4. Ladle the hot soup into bowls. Top each bowl with the crispy sautéed tofu, chopped spring onion, red onion, fresh cilantro, sesame seeds, a swirl of Lifestyle Food Coconut Cream, and a drizzle of peanut chili oil crunch.
  5. Serve the soup hot.
