  1. In a large bowl, whisk together the flour, protein powder, baking powder, and salt. Set this mixture aside.
  2. In a medium bowl, whisk together the plant-based milk, fruit puree or mashed banana, raw honey, vanilla extract, and melted coconut oil. Stir in the almond butter until the mixture is smooth and well combined.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to over-mix; it’s okay if the batter is a little lumpy.
  4. Heat a non-stick pan over medium heat and lightly grease it with coconut oil. Pour the batter into the pan to form pancakes and cook until the edges begin to bubble and the bottom is golden brown. Flip the pancakes and cook until both sides are browned and the pancakes are cooked through. Continue cooking the remaining pancakes.
